Any duck recipe recommendations ?

My builder kindly gave me these last night.

They are the third batch and so I have an awful lot of duck breast in the freezer. :)

Does anyone have any recommendations for duck breast recipes, please ?

Rog, nice haul and a good place to hang them up till the feathers drop off :lol:

Marinade with oranges and orange liqueur, then panfry for a few minutes, Adrian (Masterchef) would know how long so as not to dry them out.

Cold smoke the breasts with a mix of Apple, Oak and Hickory for 2 hours. Then coat them with a thin glaze of Apricot jam and put them in a sous vide bag with Shallots. Cook until done to your liking and serve with butter saute'd grated beetroot and dauphinoise tatties.

Lidl had loads of 3m duct tape in last week.
I'm still using the stuff that fell in my car boot when I retired :o

Cold smoking just means that instead of having the meat in the same chamber where the smoke is generated and comes into contact with the meat while hot and cooks it at the same time as flavouring it, you run some piping to a secondary chamber (about 6' of 1/2" pex works well), that allows the smoke to cool. This means that when the smoke touches the meat is still preserves and flavours but as the temp is low it does not cook the meat in any way. Think posh salmon slices

If you have a Big Green Egg or any similar style of ceramic BBQ it is dead easy to do cold smoking. You just need to fix some flexible metal pipe to the top vent and run it into any suitable box (such as cheap plastic boxes used for loft storage. Works a doddle.

I prefer cold smoking things like fish, duck and even eggs and salt, as the smoke flavour is a lot more subtle. Can be combined with curing if you want.
Don't like: wood, engines, electrickery, decorating, tiling, laying stone, plumbing, gardening or any kind of DIY. Not wild about spiders either.

I have one of these. All you need to do is place it in the bottom of an old cupboard (a large cardboard box will do) and hang the items you're smoking from a rail. I pierce a couple of holes in the bottom and a couple in the top to ensure the smoke rises. Don't try to cold smoke if the ambient temperature is too high. I never smoke when it's above 21C, although that's not a problem at this time of year.

That looks good Gill, how long does it take, I suppose it depends on the mass of the meaty object, say a side of salmon? Ian

The amount of time you need depends on how strongly you want a smoke flavour, how big the chamber and the meat type. For poultry & fish I generally take 18-20 hours for a light cold smoke for a subtle flavour going to 35 hours for a proper Black Forrest Ham or a really tasty venison/boar based salami
