Reason is that I'm thinking of doing it for the remaining internal doors as several of those already made, the stiles are bending out of straight big time

AFAIK I thicknessed evenly off both sides. Measured the moisture content of the remaining timber in the workshop at 8% (OK I know it's a cheap meter and so not that accurate). But I was interested in a comparison with the doors inside and that is 4%...so half as much....regardless of actual value.
